Ingredients

  • 2 Onions medium sized, thinly sliced

  • 2 Garlic Cloves minced

  • 1  1/2Cup Long Grain Rice

  • 1/2 Cup Lentils

  • 2 tsp. ground corianda

  • 2 tsp. ground cumin

  • 1 tsp. Fenugreek (whole or grounded)

  • 1/2 tsp.  Coarse Black Pepper

  • 1/2 tsp. salt

  • 2 -3 tbsp. Olive Oil

  • fresh cilantro or parsley to garnish

Directions

  • Rinse the lentils thoroughly under cold water until the water runs clear. This helps remove excess starch and ensures fluffy rice.

  • In a large pot, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they turn golden brown and caramelized, about 10 minutes. This step is crucial for developing depth of flavor in the dish.

  • Once the onions are caramelized, add the minced garlic to the pot and cook for another minute until fragrant.

  • Stir in the ground cumin, coriander, fenugreek, salt and pepper, allowing the spices to toast for a minute to release their aromas.

  • Pour in enough water to cover the lentils by about an inch and let them cook until they soften. This usually takes about 15-20 minutes.
