- 1 tbsp. Oilive Oil
- 1 tbsp. Pomegranate Syrup
- 2 tbsp. Lemon Juice
- 1/4 tsp. Coarse Black Pepper
- 1/4 tsp. Sea Salt
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Prepare Chickpeas and Red Peppers: Rinse and drain canned chickpeas. Pat them dry with a paper towel. Toss chickpeas and whole red peppers with olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 20-25 minutes until chickpeas are crispy and peppers are tender, shaking the pan occasionally for even cooking.
- Prepare Dressing: In a small bowl, whisk together pomegranate syrup, lemon juice, olive oil, salt, and pepper until well combined. Adjust seasoning to taste.
