Ingredients
Ingredients for Guacamole:Â 3 ripe Avocados, 1/2 diced Tomato, 1/2 diced Red Onion, 1 Lime Juice, 1/4 tsp. grounded Cumin, 1/4 tsp. Sea Salt (salt to taste)Â
Ingredients for Salsa:Â 1 1/2 Tomatoes, 1/2 Red Onion, 1/4 tsp. Sea Salt (salt to taste), 1 tbsp. chopped Cilantro, 1 Lime Juice
Red, Yellow or Green Bell PeppersÂ
2 sliced Grain BreadÂ
Directions
Prepare the Ingredients: Gather your ingredients, including multigrain bread, red pepper hummus, avocados, lime juice, cilantro, salt, cumin, tomatoes, onions, jalapeños, mixed bell peppers, and any additional toppings or condiments you desire
Roast the Bell Peppers: Preheat the oven to 400°F (200°C) for oven roasting or preheat your air fryer to 400°F (200°C) for air frying. Place the whole mixed bell peppers on a baking sheet or in the air fryer basket. Roast or air fry for about 20-25 minutes until the skin is charred and the peppers are tender.
Once roasted, remove the peppers from the oven or air fryer and rinse them under cold water to cool them down. Then, carefully peel off the charred skin from each pepper. It should come off easily.
After peeling, slice the peppers into thick strips, discarding the seeds and stems.
Make the Guacamole: Mash ripe avocados in a bowl. Add freshly squeezed lime juice, chopped cilantro, diced onions, a pinch of salt, and a sprinkle of ground cumin. Mix until well combined to create guacamole. Adjust the amount of cumin according to your taste preferences.
Prepare the Salsa: Dice tomatoes, onions, and jalapeños. Chop fresh cilantro. Combine these ingredients in a bowl and squeeze lime juice over them. Season with salt to taste. Mix well to make fresh salsa.
Assemble the Sandwich: Spread a layer of red pepper hummus on both slices of toasted bread. Top it with a thick layer of guacamole. Add a spoonful of fresh salsa on top of the guacamole. Finally, layer on the roasted mixed peppers. Place the second slice of toasted bread on top to complete the sandwich.
Store Leftovers: Any leftover roasted peppers, guacamole, and salsa can be stored in separate airtight containers in the refrigerator. They will remain fresh for up to 3-4 days. Make sure to cover the guacamole with plastic wrap directly touching its surface to prevent oxidation and browning. Before serving again, give them a quick stir or mix to redistribute any separated liquids or flavors. Enjoy these leftovers in other dishes or as tasty toppings for future meals!
Serve and Enjoy: Cut the sandwich in half if desired and serve immediately. Enjoy the delicious flavors and textures of your Vegan Guac & Hummus Grain Sandwich!
