Ingredients

  • 1 cup (250 gram) Medium Couscous (Moyenne)

  • 2 tbsp. Tomato Paste

  • 1 tbsp. Tunisian Harissa Paste, add more if you like it spicier. You can find this paste at any Middle Eastern store

  • 1 diced Shallot

  • 1/4 tsp. ground Coriander

  • 1/2 tsp. ground Cumin

  • 1/2 tsp. Garlic Powder

  • 1/2 tsp. Paprika Powder

  • 1/4 tsp. Black Pepper

  • 1/4 tsp. ground Ginger

  • 1/2 tsp. Himalayan Sea Salt

  • 1-2 tsp. Maggie Aroma

  • Oilive Oil

  • 1 tsp. grass fed butter for a healthier option or any other butter of your choice, like vegan butter etc.

Directions

  • Prepare the Sauce: In a bowl, mix 2 tbsp. of Oilive Oil, tomato paste, harissa paste, and all spices. Set aside.

  • Sauté Onions: Heat 2-3 tbsp. of olive oil in a pan and sauté chopped onions until golden brown.

  • Add Sauce Mixture: Pour the sauce mixture into the pan with onions. Stir well.

  • Dissolve with Water: Pour in 1/2 cup of water, stirring until the paste dissolves.

  • Add Couscous: Slowly add couscous to the pan over medium heat, ensuring each grain is coated with the sauce.

  • Cook Couscous: Monitor the couscous, stirring occasionally, and add a touch of water if needed to keep it moist. This step is crucial for achieving a nice, fluffy texture in your couscous. Avoid adding too much water; instead, pour in small amounts gradually until the couscous is fully cooked

    Once we notice that the couscous is getting fluffier in texture, indicating it is fully cooked, we lower the heat and let it simmer until it’s fully done. Simmer until fluffy.

  • Flavor Infusion: Lower the heat and let the couscous simmer to absorb flavors fully.

  • Final Touch: Stir in 1/2 tsp. Kerrygold butter or any butter of your choice and add 1 tsp. of olive oil for richness.
