Ingredients
  

  • Romain Lettuce
  • Cucumbers
  • 1 Avocado
  • 1 tbsp. Oilive Oil
  • 1 tbsp. Pomegranate Syrup
  • 2 tbsp. Lemon Juice
  • 1/4 tsp. Coarse Black Pepper
  • 1/4 tsp. Sea Salt

Instructions
 

  • Preheat Oven: Preheat your oven to 400°F (200°C).
  • Prepare Chickpeas and Red Peppers: Rinse and drain canned chickpeas. Pat them dry with a paper towel. Toss chickpeas and whole red peppers with olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 20-25 minutes until chickpeas are crispy and peppers are tender, shaking the pan occasionally for even cooking.
  • Prepare Dressing: In a small bowl, whisk together pomegranate syrup, lemon juice, olive oil, salt, and pepper until well combined. Adjust seasoning to taste.
  • Prepare Salad Ingredients: Wash and chop romaine lettuce, cucumbers, avocado, and roasted red peppers into bite-sized pieces.
  • Assemble Salad: In a large bowl, combine chopped romaine lettuce, cucumbers, avocado, roasted red peppers, and roasted chickpeas.
